I don’t know about you guys, but where I am, it’s too damn hot outside to cook. I just don’t feel like it right now. I don’t feel like going to the tiny grocery store down the street and almost getting killed in the parking lot, I don’t feel like chopping and measuring, and I sure as hell don’t feel like cleaning up. (That said, I will still be reading everyone’s D-Feast Friday recipes.)
What DO I feel like doing on this 108-degree-heat-index Friday in muggy Florida? Having an adult beverage, of course.
Alcohol can be a weird thing for PWDs, and everyone’s different. Light beers usually don’t do a thing to my blood sugar, but yummy treats like IPAs and Hefeweizens are like granola bars in a glass, bolus-wise. And red wine? Red wine might as well be insulin itself, the way it sends my blood sugar plummeting.
Liquor-y drinks can be trouble, too, mostly because the mixers that accompany them are full of sugar. Which brings me to my diabetes-friendly adult beverage recipe: The Fresca Cocktail.
I was first exposed to this glorious combination of hard alcohol and refreshing diet goodness about a year ago, when I tried a Fresca Margarita at a place in Jacksonville Beach. It was damn tasty — and blood sugar friendly — so I’m sharing a similar recipe here.
In a shaker, mix together:
2 shots of tequila
1 shot of triple sec
1 shot of fresh lime juice
Shake. Grab a couple of tumblers and throw some ice in them. Then, fill both glasses with equal amounts of margarita mixture. Top off with cold Fresca, and enjoy. Best served with Baked Cheetos and sliced avocado.
